    What you need

    Ingredients

    Cocktails for:
    1 person
    • 40 ml
      Martell product (VS/Noblige)
    • 40 ml
      Banana puree flambe
    • 300 gr
      Banana (for puree)
    • 20 gr
      Butter (for puree)
    • 250 gr
      Sugar (for puree)
    • 50 ml
      Cognac (for puree)
    • 10 ml
      Lime juice
    • 50 ml
      Water
    • 1 unit
      Egg white
    • 15 ml
      Aquafaba (for a vegan twist)
    • 1 unit
      Banana leaf (garnish)

    Instructions

    • 1Important: all final preparations must be measured with a jigger before being added to the cocktail. Cut the bananas in half, and brown in a frying pan with the butter. Leave to brown for 5 minutes over medium heat. Pour 20gr of sugar, then 50ml of cognac over the bananas. Flambe them with a lighter until the flames go out on their own. Put the contents in a blender and add 50ml of water and 180gr of sugar, then blend for 30 seconds.
    • 2Put the cognac, banana puree flambe, lemon juice, and egg white (or aquafaba) if you wish) in a shaker.
    • 3Shake.
    • 4Pour into a glass filled with ice cubes, filtering through the strainer.
    • 5Add banana leaf to garnish.
    • 6Taste.

    Serving tips

    Serve in a short drink glass.
